As I have not published a sweet recipe for a while, I thought that the time had come to share with you this chocolate chia pudding recipe. It will delight gourmets and cocoa lovers :)!
Like most of my recipes, I created it on lazy mood and empty fridge morning. I did not have enough fresh fruit for a smoothie or oatmeal to make a porridge. That’s when I thought of this chocolate chia pudding picture from Instagram that made my mouth water so much few days earlier. I checked if I had a raw cocoa powder jar in stock. Perfect! It was there waiting for me 🙂 As this recipe is made with vegetable milk and chia seeds, it is suitable for a vegan, raw or palo diet. You can top it with fresh fruit, nut butter or cereal.
If this is not your first visit to my blog, you already know how much I like chia seeds. These tiny seeds are rich in omega-3 and fibe rand have tremendous nutritional benefits. Staple food of the Aztecs, they have the property of forming a viscous fluid when soaked in a liquid, which allows to use them to make healthy and easy to prepare desserts.
Chia pudding is my favourite takeaway snack because I can prepare the night before in an airtight container, and slip it into my handbag in the morning before leaving home.
This recipe is suitable for 2-8 people, depending whether you want to have it as a generous breakfast, or serve it in smaller servings for dessert or at teamtime.
Serves 2-8
- 500 ml soymilk
- 7 tbsp chia seeds
- 2 tbsp raw cocoa powder
- 1 tbsp maple syrup
- 2 tsp peanut butter
Directions
- Pour the soy milk in a container with lid.
- Add the peanut butter, cocoa and maple syrup.
- Whisk until smooth.
- Add chia seeds. Mix.
- Let set in refrigerator, stirring occasionally to homogenize the texture of the pudding.
