Guacamole smoothie

Guacamole is one of my favourite dishes. I is tasty, nourishing and easy to prepare, and I believe it is a must to any barbecue or party worthy of the name! I love it so much that if I had one day left, I would be able to finish it at breakfast. It did not happen simply because it never leaves!

When I was on the Candida diet, the first few weeks have been particularly challenging: I was used to have sweet breakfasts, so I had to change completely my eating habits. As I wanted to have smoothies in the morning for practical reasons, but was unable to eat fruit during the first part of the diet, I had a try to veggies smoothies. What a disappointment! Drinking them a real punishment for me, I did not enjoy them at all! Until then I had a genius idea: making a smoothie that would taste exactly like the guacamole I like so much…

The result of that crazy idea is the recipe I share with you today. It is smooth, delicious, and I promise it please even green smoothies detractors. Try it, you’ll see! In addition to its great taste, having this smoothie for breakfast will keep you satisfied until lunchtime, thanks to avocado good lipids and chia seeds, that have a high proteins and omega-3 content.

To make your breakfast even more complete and yummy, top your smoothie with fresh vegetables, seeds or nut butter.

Serves 2

  • 250 ml coconut water
  • 1 avocado
  • juice of 1 lime
  • 1/2 cucumber
  • 5 cherry tomatoes
  • 1 small red onion
  • 1 pepper
  • 6 springs coriander
  • 2 cc chia seeds
  • 1 cc cumin
  • 1/2 cc salt

Directions

  1. Srem tomatoes.
  2. Peel the onion and chop it roughly.
  3. Cut cucumber into coarse cubes.
  4. Seed the chilli.
  5. Separate the coriander leaves from the stems, keep leaves only.
  6. Blend all the ingredients in a high speed blender until smooth.
  7. Pour in a glass or bowl, top with the ingredients of your choice and enjoy!
